Dairy swaps

Buttermilk is the swap people search for most. The lemon-or-vinegar trick works because the acid thickens the milk slightly and reacts with baking soda the same way real buttermilk does.

Heavy cream for cooking can be replaced with milk and melted butter, which gets you close to the fat content. It will not whip, so for whipped cream there is no shortcut.

Sour cream and Greek yogurt swap one for one. Full-fat yogurt gives the closest result.

Egg swaps for baking

Eggs bind, lift and add moisture. A flax egg (1 tbsp ground flaxseed + 3 tbsp water) is best for binding in cookies and muffins. Applesauce adds moisture and works in cakes and brownies. For recipes with three or more eggs, substitutes struggle, so pick a different recipe.

Leavening and flour swaps

Baking powder is baking soda plus an acid, so you can make it from baking soda and cream of tartar. Do not swap baking soda for baking powder one for one: it is about three to four times stronger and needs an acid to work.

Flavor swaps

Fresh herbs to dried is roughly 3 to 1. Add dried herbs early in cooking so they soften. Add fresh herbs at the end.

Keep your swaps with the recipe

The annoying part is not the swap. It is remembering it next time. Save your recipes in Nasi and you can edit the ingredient list to note what worked. Scaling the servings updates every amount, swaps included.

FAQ

What is the best all-purpose substitute for buttermilk?

Stir 1 tablespoon of lemon juice or white vinegar into a measuring cup, top up with milk to 1 cup and let it sit for 5 to 10 minutes until slightly thickened.

Can I use baking soda instead of baking powder?

Only with an acid. Mix 1/4 teaspoon baking soda with 1/2 teaspoon cream of tartar to replace 1 teaspoon of baking powder.

How much dried herb replaces fresh?

Use about one third as much. 1 tablespoon of fresh herbs equals roughly 1 teaspoon of dried.

Do substitutions change the result?

Sometimes slightly. Swaps in sauces and stews are very forgiving. In baking, stick to the ratios in this chart and expect small changes in texture.
